Jiffy Copycat Recipes

Chelsea Milling Company has manufactured Jiffy mix products from the same plant in Chelsea, Michigan since 1930. The company was founded by Harmon Holmes as a flour-milling operation; his daughter-in-law Mabel White Holmes developed the original Jiffy Biscuit Mix in 1930, making it one of the first commercially available baking mixes in the United States. The company remains privately held and family-operated — now in its fourth generation — and produces more than 65 Jiffy mixes. The Corn Muffin Mix is the best-known product, priced at about $0.49–$0.59 per box, making it one of the cheapest baking products in the American pantry. The same mix is the base for every Jiffy corn casserole (also called corn pudding) recipe in America — a Thanksgiving staple made with a box of Jiffy mix, cream-style corn, whole-kernel corn, sour cream, and eggs.
