Instructions
- 1.Boil the potatoes. Place the cubed potatoes in a large pot and cover with cold salted water. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-18 minutes until fork-tender.
- 2.Drain and mash. Drain the potatoes thoroughly and return to the hot pot. Add the 4 tablespoons butter, milk, and heavy cream. Mash until smooth but still slightly chunky — Popeyes' version isn't perfectly smooth.
- 3.Season the potatoes. Stir in the Cajun seasoning, garlic powder, salt, and pepper. Taste and adjust — the potatoes should have a noticeable but not overpowering Cajun kick.
- 4.Make the Cajun gravy. In a separate saucepan, melt 2 tablespoons butter over medium heat. Whisk in the flour and cook for 2 minutes until golden. Slowly whisk in the chicken broth. Add the onion powder and an extra 1/2 teaspoon of Cajun seasoning. Simmer for 5 minutes until thickened.
