Brasserie Les Halles opened in 1990 at 411 Park Avenue South in Gramercy, New York. Anthony Bourdain worked there as executive chef in the late 1990s, and the kitchen became the setting for his 2000 memoir Kitchen Confidential. In 2004 he published Anthony Bourdain's Les Halles Cookbook, which laid out the restaurant's full menu. The restaurant closed in 2017. Its steak tartare, with Cognac and anchovy in the dressing, remains the most searched-for tartare recipe in America.
