Fish Cheeks opened in 2016 on Bond Street in NoHo, serving the regional coastal Thai food that most American Thai restaurants had never attempted — not pad thai or green curry, but the seafood-forward dishes built on fish sauce, fresh chilis, and the aromatics of the Thai coast. The restaurant is famous for its Zabb Wings (double-fried, 24-hour fish-sauce-marinated, finished in a dry khao khua and makrut lime leaf spice dust rather than any sauce), its coconut crab curry, and a whole steamed fish. Both the NoHo original and the Brooklyn Williamsburg location book out weeks in advance.
