Hellmann's Copycat Recipes

Hellmann's is the American mayonnaise brand founded by Richard Hellmann, a German immigrant who opened a New York City delicatessen in the early 1900s. His wife's mayonnaise recipe became so popular that he began selling it in jars, eventually trademarking the Blue Ribbon Mayonnaise name in 1913. In 1932, Hellmann's (East Coast) merged with Best Foods (West Coast), which is why the same formula is sold under the Best Foods name west of the Rocky Mountains. Unilever acquired both brands in 2000. Hellmann's Real Mayonnaise — made with soybean oil, whole eggs, egg yolks, distilled vinegar, and lemon juice concentrate — holds about a 40% share of the US mayonnaise market. A 30-oz jar retails for about $5–6 at most grocery stores.
