Lou Malnati's Pizzeria is the Chicago institution that perfected deep dish after Lou's father Rudy Malnati Sr. developed the original recipe at Pizzeria Uno. Lou opened the first location in Lincolnwood in 1971; the chain now has 60+ locations. Their signature is sliced (not shredded) whole-milk Wisconsin mozzarella and a butter-enriched crust that gives every slice a distinct pull and flaky edge.
