Pizzeria Bianco is Chris Bianco's James Beard Award-winning pizzeria in Phoenix, Arizona — first opened in the back of a grocery store in 1988. Bianco, a Bronx-born, self-taught pizzaiolo, is widely considered the maker of America's best pizza: Ed Levine (Serious Eats founder) called it the best pizza in the country, and Jonathan Gold placed it among the top ten pies he ever ate. Each pizza is made from a cold-fermented dough stretched by hand and baked in a wood-burning oven. The menu lists only six whole pies; his most iconic is the Rosa — red onion, Arizona pistachios, fresh rosemary, and Parmigiano-Reggiano on the bare, sauce-less crust. Pizzas run $18–22 each; the wait for a table has historically stretched to three or four hours.
