Danny Meyer's Union Square Cafe — opened in 1985 as his first restaurant — is the New York dining room that defined warm, seasonal American hospitality for a generation. Chef Michael Romano's fall Butternut Squash and Apple Soup with Chestnuts became one of the most reprinted NYC restaurant recipes of the 1990s through the 1994 Union Square Cafe Cookbook.
