Zaytinya Copycat Recipes

Zaytinya — 'olive oil' in Turkish — is José Andrés's Eastern Mediterranean mezze restaurant open in Washington DC since 2002. The menu spans Turkish, Greek, and Lebanese small plates; its hommus, htipiti (roasted red pepper and feta), and warm pita are the reason most first-timers come back. New York City (NoMad), Las Vegas, and Nashville locations have since opened. The restaurant inspired a cookbook in March 2024.
