Bad bell peppers are wrinkled and soft with slimy dark spots, mold, or a sour smell. A slightly wrinkled but firm pepper is fine, and small mold spots on a firm one can be cut out with an inch of margin.
Signs Bell Peppers have gone bad
Soft, sunken, dark spots. Wet, sunken spots, often near the stem or bottom, mean decay. Cut away if small and the rest is firm; otherwise toss.
Slimy skin. A slick, sticky film is bacterial growth, which means the pepper should go in the trash.
White or gray mold, inside or out. Check inside the cavity, where mold often starts. On a firm pepper, cut an inch around the spot; if the pepper is soft or the mold is widespread, discard it.
Sour or rotten smell. Fresh peppers smell clean and green. A sour or musty smell means they’ve spoiled.
Collapsed, shriveled, rubbery walls. A pepper that folds in or has paper-thin, floppy walls has lost too much moisture. If there’s no rot it’s edible but poor for raw use.
Slimy seeds and black interior. Slice it open. Brown, slimy seeds and dark, wet walls mean the pepper is rotting from the inside.
Looks weird, but it's fine
Wrinkled skin. Slight wrinkling means moisture loss. The pepper is fine for cooking if the walls are still firm.
Color change from green to red, yellow, or orange. That’s ripening, and the pepper gets sweeter. It’s not spoilage.
Small bumps or white pith lines inside. Those are natural features. Remove the seeds and pith if you like.
