Heavy cream is bad if it smells sour, looks lumpy or yellow, or won't pour smoothly. Opened cartons last about 5 to 7 days in the fridge, so smell it before whipping.
Signs Heavy Cream has gone bad
Sour or off smell. Fresh cream smells sweet and neutral. A sour, cheesy, or pungent odor means it has turned.
Lumps or thick clots. Curdled chunks that don't shake out are spoiled cream, not just thickened. Don't strain and use it.
Yellow or gray tint. Cream should be a pale white or ivory. A noticeable yellowing or dingy color means spoilage.
Mold on the surface. Fuzzy spots, particularly around the rim, mean the carton goes in the trash.
Sour taste. If a tiny taste shows sourness or a bitter edge, discard it. Don't whip it, since the flavor will carry through.
Looks weird, but it's fine
Thickened cream at the top. Some creams without stabilizers separate. Shake the carton and it should blend.
Small flecks of butter. Cold, agitated cream can form tiny butter-like grains, especially if over-shaken. It's harmless if it smells fresh.
Slightly thick pour when very cold. Cream thickens as it chills, so a slow pour right out of a very cold fridge is normal.

How to store it
Store the carton on a middle shelf, away from the door, and always reseal the cap or spout tightly.
Freeze leftover cream in ice cube trays and drop cubes into soups, sauces, and coffee.
Check the date before whipping, since cream that's close to its limit won't hold peaks as well.
Sometimes for a few days if it has been kept cold and passes the smell and look test. Ultra-pasteurized cream lasts longer, but when in doubt, throw it out.
Why won't my heavy cream whip?
It might be too warm, low in fat, or too old. If it smells fine, chill the bowl and whisk and try again. If it smells sour, discard it.
Does heavy cream go bad faster than milk?
Not necessarily. Ultra-pasteurized heavy cream often lasts longer than milk. Once opened, though, expect about a week.
General guidance based on USDA FoodKeeper. Storage times are estimates and conditions vary. When in doubt, throw it out.
