Bad scallops smell sour, sulfury, or ammonia-like, feel slimy or sticky, and look gray or dull. Raw scallops keep just 1 to 2 days in the fridge.
When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.
Signs Scallops have gone bad
Sour or sulfur smell. Fresh scallops smell sweet and clean, like the sea. Any sour, sulfur, or ammonia note means bacteria are at work and it's time to toss them.
Sticky, slimy surface. Scallops should be moist but not slick. A tacky film that clings to your fingers is a sign they've gone off.
Gray, yellow, or dull color. Good sea scallops are creamy white to pale pink or tan. Gray, yellowish, or dry-looking scallops are aging.
Soft, mushy flesh. Fresh scallops feel firm and spring back when pressed. If they feel mushy or fall apart, they've broken down.
Milky, cloudy liquid in the package. A little clear juice is normal. A lot of cloudy, milky, or smelly liquid pooling around them means they're past their prime.
Looks weird, but it's fine
Small tough muscle on the side. That little rectangular flap is the side muscle that attached the scallop to its shell. It's safe but chewy, so pull it off before cooking.
Creamy, tan, or pinkish color. Natural scallops vary from ivory to pale orange. Pure bright white often means they've been soaked in a phosphate solution, which dilutes flavor and hurts browning.
Rubbery texture when overcooked. Tough scallops are usually from overcooking, not spoilage. A hot pan for about 90 seconds per side is plenty.

How to store them
Keep scallops in their container over ice in the coldest part of the fridge, and plan to cook them within a day.
Pat them dry and keep them uncovered for a short time before searing, and cook right away to avoid moisture buildup.
To freeze, lay them single layer on a tray until solid, then bag them. Thaw overnight in the fridge.
Sour, sulfurous, or like ammonia. Good scallops smell faintly sweet and briny. If you notice anything sharp, don't taste test them, just throw them out.
Are slimy scallops safe to eat?
No. A sticky, slick coating isn't normal moisture, it points to bacterial growth. Discard them.
Can I eat scallops past the sell-by date?
It's risky. Raw scallops spoil fast, and the date assumes perfect cold storage. If the date has passed and there's any odd smell or texture, throw them away.
General guidance based on USDA FoodKeeper. Storage times are estimates and conditions vary. When in doubt, throw it out.
