How to Tell If Bacon Is Bad

Quick answer

Bacon is bad if it smells sour or rancid, feels slimy, or has turned gray, green, or fuzzy. Opened bacon lasts about 7 days in the fridge; unopened lasts up to the date on the package, or about 2 weeks.

When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.

Signs Bacon has gone bad

  1. Sour or rancid smell. Good bacon smells smoky and salty. A sour, sharp, or paint-like rancid smell means the fat has gone off.
  2. Slimy, sticky slices. If slices feel slick or stick together with a film, bacteria have been growing.
  3. Gray, green, or brown dullness. Fresh bacon is pink with white fat. Grayish, greenish, or dull brown meat is a warning sign.
  4. Yellowing fat or mold. Yellow, crumbly fat suggests rancidity, and fuzzy spots of any color mean it must go.
  5. Opened more than a week. Listeria can grow in the fridge with no change in look or smell. Once opened, the 7-day clock matters.

Frequently asked questions

Can you eat bacon that smells a little off?

No. A sour or rancid smell means spoilage. Bacon is cured but not shelf-stable, so when in doubt, throw it out.

Is bacon safe to eat after the sell-by date?

Unopened bacon is generally fine for a short time past the date if it was kept cold, but once opened you have about 7 days no matter what the date says.

Does cooking bacon kill bacteria from spoilage?

Cooking crisps and kills many germs, but it does not remove toxins from spoiled meat or fix rancid fat. If it is slimy or smells bad, throw it out.
