How to Tell If Ground Beef Is Bad

Quick answer

Ground beef that smells sour, feels slimy or sticky, or has turned brown or gray all the way through is bad. Cook or freeze raw ground beef within 1–2 days of buying it.

When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.

Signs Ground Beef has gone bad

  1. Sour or rancid smell. Fresh ground beef has a mild, slightly metallic scent. A sour, sweet-rotten, or sulfur-like odor means it is spoiled.
  2. Slimy or tacky surface. If it feels sticky and slick instead of cool and slightly moist, bacteria are growing across the surface.
  3. Brown or gray throughout. Surface browning alone can be oxygen. If the entire package, including the inside, is dull brown or gray and smells off, discard it.
  4. Visible mold. Any fuzzy white, green, or blue spots mean the batch is done.
  5. Past 1–2 days. E. coli and Salmonella can be present with no smell or color change, and grinding spreads surface bacteria all through the meat. The time limit matters more than the sniff test.

Looks weird, but it's fine

Frequently asked questions

Is ground beef bad if it is brown?

Not necessarily. Brown can come from lack of oxygen or from age. Check the smell and texture, and the date. If it is slimy, smells off, or is past 1–2 days, toss it.

Can you eat ground beef 2 days after the sell-by date?

That is risky. Raw ground beef should be cooked or frozen within 1–2 days of purchase, and a date a couple of days gone suggests it is already outside that window. When in doubt, throw it out.

Does cooking kill bacteria in spoiled ground beef?

Cooking to 160°F kills live bacteria, but it will not remove toxins that some bacteria already produced. Spoiled ground beef is not made safe by cooking.
