Steak is bad if it smells sour or rotten, feels slimy or sticky, or has turned gray, green, or brown across the surface. Raw steak keeps 3–5 days in the fridge.
When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.
Signs Steak has gone bad
Sour or sulfur smell. Fresh steak smells clean and faintly metallic. A sour, ammonia, or rotten-egg smell means it is spoiled.
Slimy film. A tacky, slick coating that does not wipe off cleanly signals bacterial growth. Fresh steak is moist but not slippery.
Gray, green, or dark brown patches. Green or iridescent-green discoloration, or spreading dull gray-brown, goes beyond normal oxidation.
Dry, sticky, tacky edges. Edges that feel gummy and sticky after days in the fridge are often the first to turn.
Past 5 days. Harmful bacteria on the surface can be silent. After 3–5 days raw in the fridge, play it safe and discard.
Looks weird, but it's fine
Purplish-red in vacuum packs. Without oxygen, steak looks dark purple. Once opened, it blooms back to red within minutes.
Brownish surface after sitting. Short-term browning is oxidation of myoglobin. If it smells normal and is within date, it is fine.
Iridescent sheen. A rainbow shimmer on cut surfaces comes from light bouncing off muscle fibers, not from spoilage, provided there is no off smell.

How to store it
Keep steak in the coldest part of the fridge, on the bottom shelf, in its original wrap or a sealed container.
For longer storage, wrap tightly in freezer paper or a freezer bag with the air pressed out, to prevent freezer burn.
Thaw in the fridge, in cold water, or in the microwave. Never leave steak out to thaw on the counter.
Brown by itself is often just oxygen exposure. If it smells fine, feels firm and moist rather than slimy or sticky, and is within 3–5 days, it is likely fine. If any sign is off, throw it out.
Can you eat steak that smells a little?
No. A sour or off smell means spoilage bacteria are present. A faint blood or metallic smell is normal, but when in doubt, throw it out.
Does cooking kill bacteria in spoiled steak?
Cooking kills many bacteria, but not the toxins some leave behind. Do not try to rescue steak that has turned by cooking it well done.
General guidance based on USDA FoodKeeper. Storage times are estimates and conditions vary. When in doubt, throw it out.
