How to Tell If Pork Is Bad

Quick answer

Pork is bad if it smells sour or sulfurous, feels sticky or slimy, or has turned gray, green, or dull brown. Raw pork chops, roasts, and loin keep 3–5 days in the fridge.

When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.

Signs Pork has gone bad

  1. Sour, sulfur, or sharp smell. Fresh pork has almost no smell. Any sour, rotten, or eggy odor means it has turned.
  2. Sticky, slimy surface. A tacky film you can feel with a dry finger is a classic sign of bacterial growth.
  3. Gray, green, or brownish color. Raw pork should be pale pink to light red. Gray-green patches or a very dark, dull look are warning signs.
  4. Soft, mushy meat. Pork that has lost its firmness and feels mushy or falls apart when raw is past its prime.
  5. More than 5 days. Salmonella and Yersinia can grow with little change. Do not rely on appearance after 3–5 days raw.

Looks weird, but it's fine

Frequently asked questions

Can you eat pork that smells a little?

No. Pork should smell very mild. A sour or sulfurous smell means it has gone bad. If you are unsure, throw it out.

Is pork safe to eat 2 days after the sell-by date?

If it was stored at 40°F or below, it can be okay for a short while, but the 3–5 day limit after purchase still applies. Ground pork is only good 1–2 days.

Does cooking kill bacteria in spoiled pork?

Cooking kills live bacteria but not the toxins they may have made, so cooking never turns spoiled pork into safe pork.
