How to Tell If Cooked Rice Is Bad

Quick answer

Cooked rice should be refrigerated within 1 hour and eaten within 3 to 4 days. Rice left out longer than 2 hours can carry Bacillus cereus toxin that reheating won't destroy, so toss it even if it looks fine.

When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.

Signs Cooked Rice has gone bad

  1. Left out more than 2 hours. This is the biggest red flag, and it can't be seen or smelled. Bacillus cereus spores survive cooking and then multiply at room temperature, producing a heat-stable toxin. Reheating does not make that rice safe.
  2. Sour or off smell. Fresh rice smells mild and clean. A sour, funky, or ammonia-like odor means bacteria have grown.
  3. Slimy or sticky film. Rice that feels slick or leaves a gooey coating on your fingers has bacterial growth. Discard it.
  4. Mold or discoloration. Fuzzy spots in any color, or yellow, pink, or gray patches, mean it's long past safe.
  5. Hard, dried-out clumps after more than 4 days. Rice that's been in the fridge past 3 to 4 days is risky even if it looks acceptable. Don't gamble on it.

Frequently asked questions

How long can cooked rice sit out?

No more than 2 hours, or 1 hour when it's hot out. After that, Bacillus cereus can produce a toxin that survives reheating. Throw it away.

Can you reheat rice that was left out overnight?

No. The toxin that causes "fried rice syndrome" is heat-stable, so microwaving or frying won't make it safe. When in doubt, throw it out.

Is it safe to eat 5-day-old rice from the fridge?

It's best not to. The USDA recommends eating refrigerated leftovers within 3 to 4 days. Past that, bacteria can grow without obvious signs.
