Nuts are bad if they smell like paint or old oil, taste bitter or sour, or show mold or shriveled, dark kernels. Shelled nuts keep about 3 to 6 months in the pantry and up to a year in the freezer.
Signs Nuts have gone bad
Paint, putty, or stale-oil smell. Nuts are packed with natural oils that turn rancid. A sharp, chemical, or crayon-like smell means they've gone off.
Bitter or sour taste. Fresh nuts taste sweet and buttery. A bitter, soapy, or sour bite is a rancidity warning, so spit it out and toss the batch.
Mold or dark fuzzy spots. Moldy nuts can carry toxins like aflatoxin. Never eat nuts with visible mold, and discard the whole bag.
Shriveled, rubbery, or discolored kernels. Dried-up, dark, or rubbery nuts are old and likely rancid. Discard any that look this way.
Tiny holes or webbing. Pantry moths and weevils can infest nuts. If you see webbing or small holes, throw them away.
Looks weird, but it's fine
Pale powdery bloom on the surface. A chalky film on some nuts like almonds or walnuts is natural dust or skin residue. If it wipes off and smells fine, there's no concern.
Slightly soft nuts after humid weather. Nuts can lose crunch when they pick up moisture. You can re-crisp them in a warm oven, as long as they smell fresh.
Dark spots on the shell. Shell discoloration is cosmetic. Judge by the kernel inside.

How to store them
Store shelled nuts in airtight containers in the fridge or freezer.
Keep them away from heat and light, which speed up rancidity.
Buy only what you'll use within a few months, especially walnuts and pecans.
