Soy sauce is very shelf-stable, but it's bad if it smells sour or off, shows mold, or tastes flat and harsh. Unopened it lasts 2 to 3 years, and opened about 2 to 3 years in the pantry for quality, longer in the fridge.
Signs Soy Sauce has gone bad
Mold or floating film. Rare, but a fuzzy or filmy layer on top means contamination. Discard the bottle.
Sour or rotten smell. Soy sauce should smell salty, savory, and slightly sweet. A sharp, rancid, or moldy smell is a warning.
Off, harsh, or flat taste. Old soy sauce can taste dull or bitter. If the flavor has clearly changed, replace it.
Slimy residue around the cap. Crusty buildup is usually just dried salt, but a slimy or moldy ring means contamination from dirty spouts.
Looks weird, but it's fine
Darker color. Soy sauce darkens with age and air exposure. It's a quality change, not a safety one.
White crystals or salty crust at the rim. Salt crystals form around the cap as liquid evaporates. Wipe them clean.
Cloudiness or sediment. Naturally brewed soy sauce can have fine sediment at the bottom.
