How to Tell If Ham Is Bad

Quick answer

Ham is bad if it smells sour, feels slimy, or looks gray, green, or fuzzy. Leftover cooked ham lasts 3–4 days in the fridge, and an opened packaged ham lasts 3–5 days.

When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.

Signs Ham has gone bad

  1. Sour or sulfur smell. Ham should smell sweet and salty. A sharp sour or rotten-egg smell means it has spoiled.
  2. Slimy, tacky surface. A sticky film on the exterior or sliced faces signals bacterial growth.
  3. Greenish or gray patches. Cured ham stays pink. Gray or greenish areas, particularly with a bad smell, mean throw it out.
  4. Mold on cooked or sliced ham. Fuzzy mold on a cooked or packaged ham means toss it. Only dry-cured country hams are known to carry harmless surface mold.
  5. Left out too long. Ham at a party buffet for over 2 hours is a risk, even if it looks and smells fine.

Looks weird, but it's fine

Frequently asked questions

How long is ham good for in the fridge?

Leftover cooked or opened ham is good for 3–5 days, and the clock starts when it was cooked or opened. After that, freeze it or throw it out.

Can you eat ham that is a little slimy?

No. Sliminess means bacteria have been growing, and rinsing does not help. When in doubt, throw it out.

Does cooking kill bacteria in spoiled ham?

Heating kills live bacteria but does not destroy toxins left behind. Slimy or sour ham should be thrown away, not reheated.
