Ground turkey is bad if it smells sour or sulfurous, feels slimy or tacky, or turns gray-green. Raw ground turkey should be cooked or frozen within 1–2 days.
When in doubt, throw it out. Bacteria that cause food poisoning often don't change the smell or look. Go by the time limits below too.
Signs Ground Turkey has gone bad
Sour or sulfur smell. Fresh ground turkey is nearly odorless. A sour, eggy, or ammonia scent means it has spoiled.
Slimy or sticky surface. Because it is so finely ground, spoilage bacteria spread quickly. A tacky film is a strong warning sign.
Gray, green, or dull yellow. Raw ground turkey is pale pink. A gray-green tint, or deep dark patches throughout, means toss it.
Swollen or leaking package. Gas from bacteria can puff up a tray package. Do not open it up for a closer look, discard it.
Past 1–2 days. Salmonella can be present in ground poultry without smell or visible change, so the time limit matters most.
Looks weird, but it's fine
Pale pink or slightly beige. Turkey is leaner and lighter than beef. A pale color is normal for fresh ground turkey.
Grayer color when cooked. Cooked ground turkey is naturally pale gray-tan and not a sign of spoilage.
Freezer burn. Dry, light patches on frozen turkey affect texture only. It is still safe.

How to store it
Place the package in a bowl or on a plate on the bottom shelf in case it leaks.
Freeze what you will not use in 1–2 days, flattened in a zip bag so it thaws quickly.
Cook to a safe 165°F internal temperature, since ground poultry needs a higher temperature than beef.
No. Ground turkey should have virtually no smell, so any sour or sulfurous odor is a clear reason to throw it out.
Is ground turkey safe a day after its sell-by date?
Possibly, if it was kept at 40°F or below and the package is not leaking, but you must still cook or freeze it right away. When in doubt, throw it out.
Does cooking kill bacteria in spoiled ground turkey?
Cooking to 165°F kills live bacteria, but toxins from spoilage can survive. Spoiled ground turkey should be discarded.
General guidance based on USDA FoodKeeper. Storage times are estimates and conditions vary. When in doubt, throw it out.
